Ingredients
12 pre-made shortcrust pastry tart cases
Can of condensed milk
2 tablespoons Golden Syrup
50g butter
3-4 egg whites
Castor sugar
Method
In a saucepan over medium heat mix together condensed milk, butter and golden syrup.
Continue to stir unitl mixture turns a caramel colour and begins to thicken.
Spoon caramel into pastry cases.
Whisk the egg whites until they form stiff peaks and gradually add sugar until meringue becomes glossy. I just add sugar to taste. Once sweet enough and glossy I stop adding the sugar.
Spoon meringue on top of caramel in pastry cases and bake in moderate oven for approx 10 mins or until meringue starts to become golden.

Chang's Noodle Salad
Ingredients (serves 6-8) ½ -1 Chinese Cabbage, or ¼ savoy cabbage (shredded finely)
6 Green Onion (chopped 5mm length)
100g Lightly roasted slivered Almonds or Pinenuts
1 pkt Chang’s Fried Noodles 100g (Original or Onion Flavoured)
Dressing:
¼ cup White Vinegar
1/4 cup Castor Sugar
1 tblsp Chang’s Soy Sauce
2 tsp Chang’s sesame oil (Optional)
½ cup Olive Oil
Method
Mix all the ingredients of the Dressing in a bowl. Stir well until sugar is dissolved. Combine the Cabbage, chopped Green Onions and almonds in a salad bowl. Add dressing and mix well. Just before serving add the noodles and toss thoroughly.

Jamie Oliver's Deconstructed Pumpkin Anitpasto Platter
Ingredients
Half a butternut pumpkin
Fennel Seeds
Ground Cumin
Garlic
Oregano
Olive oil
Salt/Pepper
Rocket
Balsamic dressing
Semi sun dried tomatoes
Sour dough french stick
Combine spices, herbs, garlic, salt and pepper and oil in a bowl and mix to create a paste. Cover pumpkin in the paste. Bake in 200C oven for 45 mins covered in foil then another 30 mins uncovered.
Serve on platter with rocket dressed in Balsamic dressing, tomatoes, bread and anything else you like! Other ideas are panchetta, parmesan grated through rocket, bococcinni marinated in lemon, oil and sweet chilli.

A very quick recap of 2012
My very first blog post. Yay! I have decided to start up this blog mainly to become more techno savvy so eventually I can bring more technology knowledge into my classroom. Another big reason for starting this blog is to have a very detailed journal of my family's life. As we near the end of 2012 I have realised that many wonderful and not so wonderful things have happened this year but I have forgetten a lot of what happened for us in 2012. A full year and so few memories. And not to mention hardly any photos. So this will be my attempt to document our lives more fully so we have something to look back on to remind us of all the wonderful things we have done together as a family. Here is my attempt at recounting 2012 but my aim is my recap of 2013 will be heaps easier as it will be all here!!!!
January
January saw Amali starting Kindergarten and didn't she do that like a pro. She eased into school life so beautifully and had a magical first year at school.
February and March
From memory nothing significant happened in these couple of months. We eagerly continued to watch the construction of our new home while living with my parents and Amali continued to settle into school beautifully.
April
FINALLY we moved into our beautiful new house. We settled in almost immediately and oh how we love it!
May
Cannot remember a thing that happened in May. Terrible I know.
June
Our beautiful girl turned six. Not sure how that happened as I'm only 26 and she was born last year.
July, August, September
Very difficult months for me as Glen's employment was so up in the air. He changed jobs a couple of times before finally deciding that it was back to WA he go. I miss him when he is working away but the financial stability this job gives us is well worth it. Now to only hope this position may lead to bigger and better things for him. He certainly deserves it.
In July Amali blitzed the Orange and Wellington Eisteddfods in dance winning not one, not two but three first places and a third place!
Oh and of course Leah was baptised somewhere in here too.
October

November saw Glen turn 32! Wow you old fart Glen.
December
December was a huge month for Amali Vale. She certainly was a shining star this month. Firstly she was asked to play the part of Mary in the Kindergarten Nativity play. How proud were we! And didn't she do it beautifully.
Then she was presented with a class award for Consistency and Effort at her school's Presenation Assembly.
THEN she performed beautifully at her Christmas Dance concert.
Finally she completed Kindergarten with an outstanding report. We are so immensely proud of her and the beautiful, talented girl she has become.
Of course this month also brought us Christmas. We celebrated an early Smith Christmas while Glen was home then celebrated the actual day with my family at Mum and Dad's. Pictures to come.
